Clean food

Anybody here who wants share his wisdom or experience or hatred or foremost fresh ideas on clean food or low-carb nutrition?
My take in this is: it's fast to cook, you need less ingredients, it's simple and easier to count calories, and it can balance out the blood glucose levels, which also can reduce unwanted mood changes. Kitchen is cleaned up faster 😂 also.
I want learn how You practice this or what is your motivation for or against it.
Washing ingredients before cooking, yes this is also clean food and funny 😋.

I don't cook, I haven't got the "feel" for it. I can do simple foods, so I will survive for a few days without the lovely cooking of Mrs. Gee, but really I am not a cooking fan. I just want to eat :). Unfortunately Mrs. Gee is a vegetarian so I don't get a lot of meat, other than thin slices of beef for my lunch sandwich.
On the fortunate side though she does not use processed stuff at all, and she does not use any low fat food stuff. And I find her food really tasty. Maybe I am not a Feinschmecker, but I like her cooking.
When I started taking my health seriously about 8 years ago and wanted to lose weight, I did so not by counting calories, rather by starting to reduce the amount of food I eat over a long period of time, until it started to go down slowly but surely.
And every time I eat, I think to myself I could eat the same portion again - but I don't :D
